WIAW: Pumpkin Mookies Recipe

Oh, you thought I was done with pumpkins?  Well, you were wrong!

The main reason I asked for recipes was to help make me try new recipes again (for those of you who are new here, one of my goals this year was to try 52 new recipes).

I can say that I successfully tried a new recipe last night!  I looked through the list of recipes on my post, which by the way I am BLOWN AWAY at how successful and popular that post is, and I decided on one of the easier recipes.  Erin's Pumpkin Mookies.  I didn't modify it very much, I just used chocolate chunks instead of chocolate chips.  If you want to make it healthier you could leave the chocolate out completely.   



1 box of spice cake mix
1 can of pumpkin
1 cup chocolate chunks
1/2 tsp pumpkin pie spice

Seriously this couldn't be any easier!  Pre-heat the oven to 350 degrees.  Combine all of the ingredients in a bowl, mix well and spoon the batter onto greased baking sheets.  Erin is much more skilled than I am at making the exact amount! There are supposed to be 24 mookies (muffin/cookie if you were wondering) but I ended up with less than that, oops!



Place the cookies in the pre-heated oven and bake for 20 minutes.  That simple.


These tasted great and the entire house smelled like fall, I'm a big fan!

  3. I was hoping you would post some pictures--yummy! This fall, I plan to continue improving as a triathlete, which means working on my swim (and bike and run, too!), making strength training more regular, and listening to my body. Experimenting with (mostly) healthy seasonal recipes would also be fun! :)

  4. Anything that starts with pumpkin and ends in ookies I"m a fan of! Gotta try this one! I'm trying to be more proactive with planning out meals so I don't eat whatever i can get my hands on!

  6. Those look so good...and I am sure they smelled delish!!!
    I am trying to eat no processed snack foods at all...kind of hard with DAD!! But I will continue to introduce new food items to him!!

  8. I just made some chocolate chip pumpkin cookies too! They are so delicious! I just can't get enough. I'll probably be making them a couple times this season because they were soooo easy!

  11. Yum! I am so ready to just bake tons of fall things! I hope I can start this weekend - I need to start earlier than i did last year in hopes I can make at least one yummy fall thing a week!
