Caprese Grilled Cheese Sandwich

We were supposed to do our new recipe for last week yesterday, but we went to a local festival and enjoyed too much of the food!  We decided to put off making our new recipe until today and we will just make another new recipe on Sunday for this week.

I found multiple recipes for tomato basil grilled cheese sandwiches, but Mike and I like the name caprese grilled cheese sandwich better!  The funny thing about this recipe is that under most circumstances I HATE tomatoes.  The only time that I like tomatoes is when they are cooked, like with some types of bruschetta (I actually like all bruschetta) or this caprese grilled cheese sandwich.  Weird, I know!

Caprese Grilled Cheese Sandwich


2 pieces of Italian bread (or any of kind of bread)
3 thick slices of tomato
3 thick slices of fresh mozzarella cheese
4-5 fresh basil leaves
olive oil
Italian seasoning
pepper (optional)

We bought one small package of mozzarella cheese and one smaller sized tomato which was just enough for two sandwiches.

First, Mike mixed olive oil and Italian seasoning together and brushed it on one side of each piece of bread.

After that we flipped each piece of bread over and assembled the sandwiches.  The order was: basil leaves, tomato slices and mozzarella slices.  Mike put pepper on his and then drizzled some more olive oil on top of the cheese.   

Pepper optional, I don't like extra pepper!

We cooked our sandwiches on our George Foreman grill, but you could use a panini press or skillet.  We had the sandwiches on the grill for about 5 minutes and then they were done!

These sandwiches hit the spot and I'm really glad that we waited to have them today, we wouldn't have enjoyed them as much yesterday since we were so full!

  1. Yum, looks good! I only like carrots when they're raw, and I only like mushrooms when they're cooked. I like all kinds of tomatoes though!

  3. This is one of my favorite sandwiches in the whole world. Do you like balsamic vinegar? Oh man, if you do, try drizzling that inside. Deeeeeelicious!! ;)

  5. Caprese is my favorite thing in the summer! I just love mozzerella and tomatoes. I was just thinking of having grilled cheese for dinner tonight! Can't wait to go home and mix something yummy up!

  6. As soon as I saw the fresh mozzarella in the recipe list, I knew this would be perfect for me! That looks fantastic, what a nice alternative from the normal with American cheese grilled cheese sandwich. I'm huge on pepper so I'd load it up with fresh ground pepper. Yum!

  7. looks yummy...will have to try this with my fresh tomatoes this summer...and some homemade pasta salad..quick and easy after a hard day at work. I can't really think of anything that I like one way but not another. Thanks for another great recipe!

  10. Yum! I love grilled cheese and tomato... fresh basil is the perfect addition! I have a friend who is the same way with tomatoes. I can't think of any food that's like that for me.

    1. That's funny that your friend is like that with tomatoes too, I thought I was just weird!

      Definitely try adding some fresh basil or I've seen it with pesto :)
