Mike and I are continuing to have an amazing start to 2012! If you didn't notice that I updated my post from yesterday, I found out that our official times were 1:14:20 and 1:04:32. Plus, I came in 2nd (out of 7) in my age group!
This afternoon we got some yardage done in the pool. It was the first time we have swam in a little over a year and I felt it! My arms felt like noodles, but overall it wasn't too bad. We were swimmers and I know that we will eventually get back into shape.
Our workout consisted of this:
1 x 200
1 x 400
2 x 225 (first 25 sprint)
1 x 50 cool-down
Total: 1,100 yards
Why the jump back into the pool? Other than the obvious - that we WILL compete in triathlons this year.
Half Iron distance, but not all at once
We (well I am, but I make Mike do it with me) are participating in KDUB's 70.3 Birthday Challenge and this put us at a little over the halfway point for the swim portion. She set up the challenge so that you complete 70.3 (1.2 mile swim, 56 mile bike, 13.1 mile run) between January 1st and January 11th.
After swimming, we hopped on the spin bikes and spun (ugh, I said "spinned" on Facebook and my friend/relay teammate politely corrected me) 10 chlorinated-sweat filled miles. I did it in about 40 minutes and Mike was a bit faster. Only 46 more miles to go! I wore my new Aspaeris pivot shorts and they felt great, thanks mom!
In other news, we tried a new recipe last night!
Before getting "stuffed"
Last week, I saw this recipe for Turkey and Rice Stuffed Peppers that Andrea at Run. Learn. Repeat. posted on her blog. (Check out her blog, she's super speedy and has an adorable son who she pushes in a jogging stroller often!)
We followed her instructions and recipe with a few slight changes. Instead of sauteing our zucchini in Pam we used some Land O'Lakes Fresh Buttery Taste Spread (since we didn't have any stick butter), our diced tomatoes also had green chilies in it, we added some taco (instead of Mexican) cheese on the top of each stuffed pepper and our peppers must have been bigger than Andrea's. We didn't have any leftover rice and turkey mixture and we only made 4 peppers.
I would give this recipe an A+! They were really good! I could only eat one since they were so filling, but Mike ate both of his. I hope that the last one reheats well.
Side-story: There was a slight cooking accident last night. I told Mike we should start the ground turkey and then changed my mind. Mike must have turned on the burner and then forgot to turn it off and our spatula accidentally slid under the frying pan and started to burn/melt! When I went to get it to use it for something else (not realizing this had happened) I was shocked to find out that it was hot! Now we know to not turn the burner on until we are absolutely ready to use it. Luckily I didn't burn my hand and it only hurt for a half an hour or so. This could have turned out a lot worse than it did!
